    Cut the ribs into 2- or 3-bone pieces. Bring a large pot of water to a boil; season it with a pinch each of salt, black pepper, and red pepper flakes. Add the ribs and boil for 20 minutes. Drain, then let them rest for about 30 minutes.

    Meanwhile, preheat an outdoor grill to high heat and lightly oil the grate.

    Lightly coat the ribs with barbecue sauce. Grill on the preheated grate until they have a nice grilled appearance, 5 to 10 minutes per side. Move the ribs to a slow cooker.

    Pour the remaining barbecue sauce and 1 bottle of beer over the ribs; it should cover at least half of them. Cover the slow cooker. Cook on High until the meat is falling off the bone, about 3 hours, checking every hour or so; add more beer if needed to thin the sauce, stirring to keep the ribs on top in the sauce.
