Super Simple Irish Soda Bread Loaf

    Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.

    In a large bowl, combine the flour, softened butter, sugar, baking soda, baking powder, and salt. Stir in 1 cup of buttermilk and the egg.

    Turn the dough out onto a lightly floured surface and knead it gently. Shape the dough into a round loaf and set it on the prepared baking sheet. The dough will be slightly sticky.

    In a small bowl, mix the melted butter with 1/4 cup buttermilk; brush this mixture over the loaf. With a sharp knife, cut an 'X' on top of the loaf.

    Bake in the preheated oven for 45 to 50 minutes, until a toothpick inserted into the center comes out clean. Check for doneness after 30 minutes. You may keep brushing the loaf with the butter mixture as it bakes.
