    Preheat the oven to 400 degrees F (200 degrees C).

    Make the custard: In a large bowl, mix the eggs and brown sugar until smooth. Whisk in the flour and salt. Gradually add the milk, stirring constantly until fully combined. Stir in the vanilla and let it rest.

    Prepare the apples: In a 10 1/4-inch cast iron skillet over medium-high heat, melt the butter, brown sugar, and water, stirring often until it begins to boil. Reduce the heat to medium; swirl the skillet without stirring until the mixture starts to thicken, about 2 minutes. Add the apples and cinnamon. Cook, stirring, until the apples are crisp-tender and beginning to brown, 15 to 18 minutes. Remove from the heat.

    Stir the custard and pour it over the apples in the skillet.
