    Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x15-inch baking pan. Separate the egg and reserve the egg white for the filling.

    Combine the flour and salt in a bowl. Cut in the shortening with 2 knives or a pastry blender until the mixture looks like coarse crumbs. Stir in the milk and egg yolk until blended. Divide the dough into two equal portions. Press one portion into the bottom of the prepared pan; set the other portion aside.

    Stir together the apples, brown sugar, sour cream, flour, butter, and cinnamon until well mixed. Pour this over the dough in the pan.

    Roll or press the remaining dough into a rectangle and lay it over the filling. Beat the reserved egg white until frothy, then brush it over the dough.

    Bake for 15 to 20 minutes, until the top and bottom are golden brown. Remove from the oven and let cool completely, about 30 minutes, before cutting into bars.
