    Whisk 2 cups flour and salt together in a bowl; cut in the butter with a pastry blender or a fork until the mixture is crumbly. Whisk the eggs, water, and lemon juice together in a separate bowl until combined; stir this into the flour mixture until the dough comes together in a ball.

    Divide the dough ball in half; on a lightly floured work surface, roll each half into roughly a 9x13-inch rectangle. Press one rectangle into a 9x13-inch baking dish to make the bottom crust; set the remaining dough rectangle aside.

    Toss the apple slices, sugar, 3 tablespoons flour, and cinnamon together in a bowl until the apples are evenly coated; spread the mixture over the crust.

    Place the remaining dough rectangle over the apple filling to make the top crust, using scraps to cover any gaps. Cut several slits in the top crust to let steam escape during baking.

    Bake in the preheated oven until the edges are browned and crisp, 45 to 60 minutes. Let cool to room temperature before slicing into squares, about 30 minutes.
