Cheddar and Artichoke Baked Frittata

Breakfast 🍳Side Dish 🥗Dinner 🍽️Lunch 🥪 American

Cheddar and Artichoke Baked Frittata is rich and hearty, with tangy marinated artichokes balanced by sharp, melty cheese and a subtle crunch from saltine crumbs. Fresh parsley and green onions lift the flavor, while a hint of garlic and hot sauce adds gentle warmth. Serve it warm for brunch, a light lunch, or as a make-ahead party bite.

Cheddar and Artichoke Baked Frittata
  1. 1

Preheat the oven to 325 degrees F (165 degrees C). Drain the artichoke hearts and save 3 tablespoons of the liquid. Chop the artichoke hearts and set them aside.

  2. 2

Heat 3 tablespoons of the reserved liquid in a large skillet over medium heat. Add the green onions; cook and stir until they are wilted, 2 to 3 minutes.

  3. 3

Move the green onions to a mixing bowl. Stir in the artichoke hearts, Cheddar, eggs, crackers, parsley, garlic, hot sauce, salt, and pepper until evenly mixed. Pour the mixture into a 9x13-inch baking dish.

  4. 4

Bake in the preheated oven until the center is puffed and no longer moist, about 40 minutes. Let it cool slightly before cutting into 12 squares.
