French-Style Artichoke Hearts are lightly dredged and pan-fried until golden, then swirled in a bright butter-lemon and sherry pan sauce.     Put flour in a shallow bowl; beat the egg in a separate bowl. Dredge the artichoke hearts in the flour, then coat them with the egg.

    Heat vegetable oil in a skillet over medium heat; cook and stir the artichoke hearts in the hot oil until browned, about 5 minutes. Transfer the cooked artichoke hearts to a bowl.

    Pour the oil out of the skillet and wipe it clean with a paper towel; return it to the stove top. Melt the butter in the skillet over medium heat; add the lemon juice. Return the artichoke hearts to the skillet and sprinkle with Parmesan cheese; add the sherry. Season with salt and pepper; stir well.

    Use a slotted spoon to remove the artichoke hearts from the skillet and transfer them to a serving dish. Boil the sauce until reduced, 2 to 3 minutes. Pour it over the artichoke hearts; garnish with parsley.
