Australian Damper is a rustic, tender loaf with a lightly crisp crust and soft, fluffy crumb, made from just self-rising flour, a touch of butter, milk, and water. Traditionally baked by early settlers, it’s perfect warm from the oven with butter, jam, or golden syrup, and suits casual breakfasts, campfire meals, or simple suppers.

    Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet.

    Stir the flour and salt together in a large bowl. Rub in the butter until the mixture looks like coarse crumbs. Make a well in the center; pour in the milk and water, then stir until the dough comes together.

    Turn the dough out onto a lightly floured surface and shape it into an 8-inch round loaf. Place the loaf on the prepared pan; cut a cross on the top with a sharp knife.

    Bake in the preheated oven for 25 minutes; reduce the temperature to 350 degrees F (175 degrees C) and continue baking for an additional 5 to 10 minutes. The loaf should be golden brown and the bottom should sound hollow when tapped.
