Apricot-Stuffed Brie en Croûte

    Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet or line it with parchment paper.

    Cut the Brie cheese wheel in half to make 2 circles of cheese. Spread the preserves on the cut side of one circle, then place the remaining circle on top, rind-side up.

    Wrap the whole Brie wheel with one sheet of puff pastry and place it seam-side down on the prepared baking sheet. Brush the puff pastry with egg white.

    Bake in the preheated oven until the pastry is golden brown, about 30 minutes. Serve immediately.
