Side Dish 🥗 American Vegetarian 🥦

Oven-Roasted Brussels Sprouts with Lemon, Pine Nuts, and Blue Cheese balances tender, caramelized sprouts with bright citrus, crunchy toasted nuts, and a creamy, tangy finish from blue cheese. The contrast of toasty edges and rich, melty crumbles makes this a standout side for weeknight dinners or holiday tables alike. Serve it alongside roasted meats or a hearty grain dish for a memorable pairing.

Oven-Roasted Brussels Sprouts with Lemon, Pine Nuts, and Blue Cheese
  1. 1

Preheat the oven to 350 degrees F (175 degrees C).

  2. 2

Put the Brussels sprouts in a casserole or a Dutch oven with a lid. Dot the sprouts with pieces of butter. Season with salt, pepper, and lemon juice. Cover with the lid.

  3. 3

Bake in the preheated oven for 25 minutes, or until the sprouts are just barely tender. Stir occasionally to prevent sticking. During the last 10 minutes, sprinkle the pine nuts over the sprouts and remove the lid. When the sprouts are finished, sprinkle blue cheese over them before serving.
