Welsh Tea Loaf (Bara Brith)

Breakfast 🍳Dessert 🍰Snack 🍿 BritishScottishIrish

Welsh Tea Loaf (Bara Brith) is a moist, fruit-studded bread infused with brewed tea that gives it a gentle tannic warmth and deep sweetness. Tender crumb and juicy currants and golden raisins make every slice rich and aromatic, especially with a smear of butter. Serve for afternoon tea, weekend brunch, or as a cozy after-dinner treat.

  1. 1

Pour hot tea over the currants and raisins in a bowl; let them soak for 8 hours to overnight.

  2. 2

Preheat the oven to 350 degrees F (175 degrees C). Grease and line a 2-pound loaf pan.

  3. 3

Stir the demerara sugar into the tea and fruit mixture until fully dissolved; mix in the flour and egg until a smooth batter forms. Spread the batter evenly in the prepared pan.

  4. 4

Bake in the preheated oven until golden-brown and a toothpick inserted in the center comes out clean, about 40 minutes. Cool briefly in the pan, then transfer to a rack to cool completely.
