Gather all the ingredients.

Put the water and beans in a large pot and bring to a boil over high heat. Stir in the salt, take the pot off the heat, cover, and let it stand for 1 hour.

Add the carrots, onion, celery, garlic, mustard, and bay leaves to the pot with the beans and stir well. Add the ham hock and bring to a boil; lower the heat to low and simmer for 1 hour.
