Classic Ham and Great Northern Bean Soup

    Gather all the ingredients.

    Put the water and beans in a large pot and bring to a boil over high heat. Stir in the salt, take the pot off the heat, cover, and let it stand for 1 hour.

    Add the carrots, onion, celery, garlic, mustard, and bay leaves to the pot with the beans and stir well. Add the ham hock and bring to a boil; lower the heat to low and simmer for 1 hour.

    Remove the ham hock and discard it. Stir in the chopped ham and simmer until heated through, about 30 minutes. Season with ground white pepper to taste.
