Bazlama – Turkish Yogurt Flatbread

Breakfast 🍳Side Dish 🥗Lunch 🥪Snack 🍿 Turkish 🇹🇷 Vegetarian 🥦

Bazlama – Turkish Yogurt Flatbread is soft, pillowy, and lightly tangy from yogurt, with a tender crumb that’s perfect for tearing and dipping. Warm and comforting, it shines alongside grilled meats, soups, or meze spreads, and is just as good slathered with butter and herbs. Serve it fresh off the griddle for brunch, lunch, or dinner.

Bazlama – Turkish Yogurt Flatbread
  1. 1

Dissolve the yeast, sugar, and salt in the warm water.

  2. 2

Add the water and yogurt to the flour and mix until well combined; the dough should be soft but not sticky.

  3. 3

Turn the dough out onto a lightly floured surface and shape it into a ball.

  4. 4

Cover the dough with a damp cloth and let it rise at room temperature for 3 hours.

  5. 5

Cut the dough into four portions.

  6. 6

Shape each portion into a round and flatten it as if making pizza dough.

  7. 7

Cover the rounds with a damp cloth and let them rest for 15 minutes.

  8. 8

Heat a cast iron skillet or griddle over medium-high heat.

  9. 9

Place one dough round in the skillet and cook until brown spots form on the bottom, about 1 minute.

  10. 10

Flip the bread and cook for 1 more minute.

  11. 11

Remove the bread and wrap it in a clean kitchen towel to keep it warm.

  12. 12

Repeat the cooking process with the remaining dough rounds.

  13. 13

Store any leftover flatbreads in an airtight container.
