  1. 1

Combine the milk and sugar in a small saucepan over medium heat. Warm until just slightly warm to the touch, then remove from heat and stir in the yeast. Let it sit until foamy, about 10 minutes.

  2. 2

In the bowl of a stand mixer fitted with a dough hook, stir together the flour and salt. Add the softened butter, eggs, and the yeast mixture, then mix until the dough pulls away from the sides of the bowl.

  3. 3

Turn the dough out onto a floured surface and keep kneading until smooth and elastic, about 10 minutes.

  4. 4

Grease a large bowl with 1 tablespoon oil. Place the dough in the bowl and turn it once to coat. Cover and let it rest in a warm place until doubled in size, about 1 hour.

  5. 5

Grease a cookie sheet or a 9x13-inch pan with the remaining oil.

  6. 6

For plain rolls, punch down the dough and divide it into 12 equal pieces. Shape the pieces into balls and place them side by side in the greased pan.

  7. 7

Cover and let the dough rise again until almost doubled in size, 20 to 25 minutes.

  8. 8

Meanwhile, preheat the oven to 375 degrees F (190 degrees C).

  9. 9

Bake in the preheated oven until the rolls are golden brown, 20 to 25 minutes.
