    In a bowl, mix 1 1/2 tablespoons flour with salt and pepper. Coat the beef strips in this mixture.

    Melt 3 tablespoons butter in a skillet over medium heat. Add the coated beef strips and cook, stirring, until browned, about 5 minutes. Add the mushrooms, onion, and garlic; cook until the onion is just tender, 3 to 4 minutes. Move the beef and mushroom mixture to a plate.

    Melt the remaining butter in the same skillet; lower the heat to low. Stir in 3 tablespoons flour and the tomato paste; cook until lightly browned, 1 to 2 minutes. Raise the heat to medium. Slowly add the beef stock, stirring constantly, until the gravy thickens and is smooth with no lumps, 5 to 10 minutes.

    Add the beef and mushroom mixture back to the skillet with the gravy. Stir in the sour cream and sherry; heat until bubbling, about 5 minutes.
