Bethmännchen (Traditional German Marzipan Holiday Cookies)
  1. 1

Preheat the oven to 200 degrees F (95 degrees C). Line a baking sheet with parchment paper.

  2. 2

Knead the marzipan thoroughly and divide it into about forty 1 1/2-inch cubes of equal size. Roll each cube into a ball, then shape it into a round cylinder with a pointed tip.

  3. 3

Press 3 halved almonds into each marzipan cylinder so the pointed ends of the almonds face the top.

  4. 4

Lightly beat the egg white in a cup and brush each cookie with the egg white. Place them on the prepared baking sheet.

  5. 5

Bake in the preheated oven until the tops of the almonds are lightly browned, about 15 minutes. Cool on a wire rack. Store in airtight containers.
