    Put the chicken and 1 pinch salt in a large pot and cover with water. Bring to a boil, skimming off any scum with a slotted spoon. Add the lemon, celery, onion, and carrots. Simmer the broth over medium heat until the chicken begins to fall off the bone, about 1 hour.

    Discard the lemon. Remove the chicken from the pot and let it cool.

    Put the flour, salt, and pepper in a large bowl. Make a well in the center. Ladle 2 to 3 scoops of hot broth into the well. Stir the flour with a spoon until the dough comes together into a ball.

    Turn the dough out onto a floured surface. Knead gently until smooth. Roll it into a large rectangle and cut into small rectangular dumplings.

    Drop the dumplings one at a time into the simmering broth. Cook, stirring occasionally, until tender, about 30 minutes.

    Remove the bones from the chicken and chop it into pieces. Add to the pot and cook until heated through, about 5 minutes.
