Quick Blender-Made Crêpes

    Add flour, milk, eggs, and salt to a blender. Use a spatula to stir the mixture so the flour is moistened and not sticking to the sides.

    Melt butter over medium heat in a crepe pan or frying pan.

    Blend the flour mixture on low and pour in the melted butter, then return the frying pan to the stovetop. Increase the blender speed to high to remove any lumps, 2 to 3 seconds.

    Lift the hot pan off the burner and quickly pour in some batter while tilting the pan in a circular motion to cover the bottom. Pour any excess batter back into the blender. Wipe any batter from the pan’s rim with a spatula before returning it to the stove. Rinse off any partly cooked lump on the spatula before using it again.

    Cook the crepe over medium heat, checking often until the bottom is very light brown, 1 to 2 minutes. Flip the crepe carefully and cook until golden, about 1 minute more, taking care not to overcook. Transfer the crepe to a serving plate and repeat with the remaining batter.
