    Preheat the oven to 400 degrees F (200 degrees C). Line a 10x15-inch rimmed baking sheet with parchment paper.

    Melt butter in a skillet over medium heat. Add onion and cook, stirring often, until golden brown and tender, about 10 minutes. Add apple and cook, stirring occasionally, until just starting to soften, about 4 minutes. Stir in vinegar and cook for 30 seconds more.

    Arrange tart shells on the prepared baking sheet. Cut Brie into 15 small pieces and place one piece in each shell. Divide the apple mixture evenly among the shells. Sprinkle with walnuts.

    Bake in the preheated oven until the cheese is melted and the tart shells are golden, 12 to 15 minutes.

    Meanwhile, stir together caramel sauce and thyme in a small bowl. Microwave until warmed, about 15 seconds. Drizzle the tarts with the caramel mixture and garnish with flaky salt.
