Marinated Broiled Flank Steak

    In a small bowl, combine the oil, soy sauce, water, brown sugar, ginger, garlic, and pepper, and stir until well mixed.

    Score both sides of the steak with shallow crosshatch cuts, taking care not to slice all the way through.

    Lay the steak in a low, shallow dish and pour the marinade over it to fully cover the meat. Cover and refrigerate for at least 4 hours or overnight, turning the steak once.

    Position an oven rack about 6 inches from the heat source and preheat the broiler. Remove the steak from the marinade and set it on a baking pan. Reserve the marinade.

    Broil, brushing with the marinade occasionally, until browned and heated through, about 5 minutes per side. Transfer the steak to a platter and tent loosely with foil. Let rest for at least 5 minutes. Slice across the grain into 1- to 2-inch strips.
