Spicy Buffalo Chicken Mini Sandwiches bring tender shredded chicken tossed in tangy cayenne-pepper sauce together with gooey Monterey Jack, all tucked into soft Hawaiian rolls. Spicy Buffalo Chicken Mini Sandwiches

    Preheat the oven to 350 degrees F (175 degrees C). Gather all the ingredients.

    Line a large rimmed baking sheet with aluminum foil; lightly coat it with cooking spray. Using a serrated bread knife, slice the rolls in half horizontally, keeping the top and bottom halves intact; place the bottom half of the rolls, cut side up, on the prepared baking sheet.

    Evenly sprinkle 3/4 cup of the cheese over the bottom half of the rolls.

    In a large bowl, stir together the warmed chicken, hot sauce, ranch dressing, and 3 tablespoons of the ranch dressing mix until evenly coated.

    Evenly top the bottom half of the rolls with the chicken mixture; sprinkle with the remaining 3/4 cup cheese.

    Place the top half of the rolls over the cheese. Brush the tops and sides of the rolls with the melted butter. Evenly sprinkle the tops of the rolls with the remaining 1/2 tablespoon ranch dressing mix.

    Bake in the preheated oven until the cheese is melted, the tops of the rolls are golden brown, and the chicken mixture is heated through, about 10 minutes. Remove from the oven, cut into 12 sliders, and serve immediately. Recipe developed by Amanda Holstein.
