    In a bowl, combine ground chicken, green onions, ranch seasoning, 1/2 teaspoon salt, 1/4 teaspoon pepper, cheese, and 2 tablespoons Buffalo sauce and mix well.

    Spread the mixture evenly over each flour tortilla, all the way to the edges.

    Heat a griddle or pan over medium-high heat and lightly coat it with oil.

    Place the tacos meat side down on the griddle and cook, undisturbed, for 5 minutes until browned and cooked through.

    Flip the tortillas and cook for 1 minute longer.

    Meanwhile, in a large bowl, toss cabbage, celery, carrots, blue cheese, vinegar, olive oil, sugar, and the remaining salt and pepper until well combined.
