Buñuelos are light, crispy Mexican fritters fried until golden and showered with cinnamon sugar. Each bite is delicate and crackly with a warm spice aroma, perfect for sharing during holiday gatherings like Christmas and New Year or any time you want a festive sweet snack.

    Gather all ingredients.

    Beat eggs and 1/4 cup sugar in a large bowl until thick and pale yellow; stir in 1 teaspoon vegetable oil.

    Stir together 1 1/2 cups of flour, baking powder, and salt; gradually add to the egg mixture, mixing well until evenly combined.

    Turn the dough onto a floured board and knead thoroughly until smooth.

    Shape the dough into 16 even balls. Flatten and roll each into a very thin circle about 5 inches across. Let stand uncovered on waxed paper for about 10 minutes.

    Meanwhile, mix 1 cup sugar and cinnamon in a small bowl until evenly combined; set aside. Heat oil in a deep pan to 350 degrees F (175 degrees C).

    Carefully lower one dough circle into the hot oil; fry until golden, turning once, about 30 seconds per side. Transfer to a paper towel-lined plate to drain; sprinkle with the cinnamon-sugar mixture.

    Repeat with the remaining dough. Serve, or let cool completely and store in airtight containers.
