Buzzard's Bay Bourbon-Glazed Scallops

    Melt 1/4 cup butter with 2 ounces bourbon and olive oil in a large skillet over medium-high heat until the butter is melted. Add the sea scallops and cook until browned and nearly cooked through, 2 to 3 minutes per side. Move the scallops to a plate and pour off any excess liquid from the skillet.

    In the same skillet over medium-high heat, whisk in the remaining 1/4 cup butter, remaining 2 ounces bourbon, brown sugar, cayenne pepper, salt, and black pepper, and cook until the sauce reduces and the alcohol cooks off, 1 to 3 minutes. Spoon the sauce over the scallops.
