Smashed Potatoes with Caesar Parmesan

    Preheat the oven to 425 degrees F (220 degrees C).

    Boil the baby potatoes in salted water until they are fork-tender, about 15 minutes. Drain them and let them cool slightly.

    Scatter 1/4 cup Parmesan cheese evenly over a parchment-lined baking sheet.

    Place the potatoes on top and gently smash them with the bottom of a glass. Using half of the dressing, brush each potato, then sprinkle another 1/4 cup Parmesan cheese over them.

    Bake until golden and crispy, 15 to 20 minutes.

    Take the potatoes out of the oven, brush on the remaining dressing, and sprinkle the remaining cheese on top.

    Serve with extra dressing for dipping. Garnish with chopped parsley or shredded romaine. Enjoy!
