Canadian Tea Biscuits

    Preheat the oven to 425 degrees F (220 degrees C).

    Whisk the flour, baking powder, and salt together in a bowl. Cut in the shortening with 2 knives or a pastry blender until the mixture looks like coarse crumbs. Stir in the Cheddar and chives; gradually stir in the milk until a soft dough forms.

    Turn the dough out onto a lightly floured surface and knead with floured hands until smooth, about 15 times.

    Using a floured rolling pin, roll the dough out to 1 inch thick. Cut out biscuits with a 2 1/2-inch round cookie cutter and place them on an ungreased baking sheet.

    Press the dough trimmings together, roll them out again, and cut the remaining dough into biscuits.

    Bake in the preheated oven until golden brown, about 15 minutes.
