Classic Crunchy Caramel Corn

    Assemble all ingredients. Preheat the oven to 250 degrees F (120 degrees C). Put the popcorn in a very large bowl.

    Melt the butter in a medium saucepan over medium heat. Stir in the brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 4 minutes.

    Take the pan off the heat and stir in the vanilla and baking soda. Pour the caramel in a thin stream over the popcorn while stirring. Continue stirring until evenly coated.

    Divide the popcorn between two large, shallow baking dishes. Bake in the preheated oven, stirring every 15 minutes, for 1 hour.
