Caramelized Onion Mashed Potatoes

    For the caramelized onions, melt the butter with the olive oil in a large skillet over medium-low heat. Add the onions, beef broth, salt, and pepper. Cook, stirring occasionally, until the onions are a deep golden brown, 20 to 25 minutes. Remove from the heat and set aside.

    Place the potatoes in a pot and bring to a boil in enough cold, salted water to cover by an inch; cook until fork tender, about 20 minutes. Drain, return the potatoes to the pot, and dry them over medium-high heat for about 30 seconds.

    Heat the butter and milk together in a saucepan over medium heat until the butter melts. Coarsely mash the potatoes with a potato masher. Add the butter mixture and mash until fluffy. Season with salt and pepper. Top the mashed potatoes with the caramelized onions to serve.
