    Heat extra-virgin olive oil in a medium saucepan over medium-high heat. Sauté the onion in the hot oil until tender, about 5 minutes. Stir in the carrot, celery, and tarragon, and cook, stirring occasionally, until the carrots are tender, about 5 more minutes.
