Bright Celery-Lime Sorbet

    Combine the sugar and water in a saucepan over medium heat until it just begins to simmer.

    Remove from the heat.

    Let the simple syrup cool to room temperature.

    Slice the celery into small pieces and transfer to a blender.

    Add the lime juice, salt, and the cooled simple syrup, then blend until smooth.

    Pour the mixture into a strainer set over the same saucepan and press it through with a spoon until all the juice is extracted.

    Cover and refrigerate the juice until thoroughly chilled, at least 1 hour.

    Pour the celery mixture into an ice cream maker and freeze according to the manufacturer's instructions, about 20 minutes.

    Transfer the sorbet to a freezer-safe bowl, cover the surface with plastic wrap, place a plate over the bowl, and freeze until set, about 4 hours.
