Chef John's Hot Dog Buns

    Line a baking sheet with a silicone mat or with parchment paper.

    Put the yeast in the bowl of a large stand mixer; whisk 1/2 cup flour and the water into the yeast until smooth. Let it sit until foamy, 10 to 15 minutes.

    Whisk the egg, 3 tablespoons melted butter, sugar, and salt into the yeast mixture; add the remaining flour and stir.

    Attach the dough hook to the stand mixer and knead on low speed until the dough is soft and sticky, 5 to 6 minutes. Scrape down the sides if needed. Poke and prod the dough with a silicone spatula; if large amounts stick to the spatula, add a little more flour.

    Move the dough to a floured work surface; it will be sticky and elastic but should not stick to your fingers. Shape it lightly into a smooth round, gently tucking any loose ends underneath.

    Wipe out the stand mixer bowl, drizzle olive oil into the bowl, and turn the dough over several times to coat the surface lightly with oil. Cover the bowl with aluminum foil. Let the dough rise in a warm spot until doubled in size, about 2 hours.

    Place the dough on a floured work surface and shape it into a 5x10-inch rectangle about 1/2 inch thick. Cut it into 8 equal lengths. Turn each piece cut-side up and form into a hot dog bun about 5 inches long. Transfer the pieces, cut-sides up, to the prepared baking sheet, setting them about 1/4 inch apart.

    Cut a slit about 1/8 inch deep down the center of each bun. Brush 2 tablespoons melted butter over the tops and sides of each bun. Let rise until almost doubled and the buns touch each other, about 45 minutes.

    Preheat the oven to 375 degrees F (190 degrees C).

    Bake the buns in the preheated oven until golden brown, about 20 minutes. Brush the tops with the remaining melted butter.
