    Put the eggs in a saucepan and add cold water to cover them; set over high heat. When the water begins to simmer and the eggs start moving slightly, turn off the heat, cover the pan with a lid right away, and let it sit for 17 minutes. Do not lift the lid.

    Drain the hot water and run cold water over the eggs. Drain again, refill with cold water, and let them sit until cool, about 20 minutes.
