    Coat a 6-cup muffin pan with butter and cooking spray.

    In a medium bowl, whisk the eggs, milk, flour, salt, and cayenne pepper until smooth. Pour the batter into each muffin cup, filling them to about three-quarters up the sides. Sprinkle about 1 teaspoon of grated Cheddar cheese on top of each popover.

    Put the pan into a cold oven. Set the oven to 450 degrees F (230 degrees C) and bake, without opening the oven, until puffed and well browned, about 30 minutes.
