On a lightly floured surface, roll out the pie dough into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom and press it in so it fits snugly. Trim the dough to leave a 1/2-inch overhang on all sides. Fold the edges under to form a slight lip of dough over the top edge of the pan all around.

Prick the bottom of the crust several times with a fork, taking care not to pierce all the way through. Freeze the prepared crust until fully chilled, at least 30 minutes.

Meanwhile, make the filling. Heat olive oil in a medium skillet over medium heat. Add the onion and the garlic and cook, stirring often, until golden brown, about 10 minutes. Take off the heat and let cool to room temperature.

In a medium bowl, combine Gouda, basil, mayonnaise, Cheddar, Parmesan, Dijon mustard, oregano, pepper, nutmeg, and salt. Stir in the cooled onion and garlic until fully mixed.

Preheat the oven to 350 degrees F (175 degrees C).

Take the tart pan out of the freezer. Gently spread the cheese mixture evenly over the bottom. Arrange the cherry tomatoes evenly on top and press them down gently. Set the tart on a large baking sheet.

Bake in the preheated oven until the crust is golden brown, the cheeses are bubbly, and most of the tomatoes have burst, 55 to 65 minutes. Let cool for 20 minutes. Carefully remove the tart from the pan, transfer to a serving platter, and serve warm.
