Herbed Chicken Kofta Meatballs are aromatic and juicy, with fresh cilantro and mint brightening the warmly spiced chicken. Jalapeño, garlic, cumin, and coriander add gentle heat and depth, making each bite vibrant yet comforting. Serve these for a weeknight dinner with rice and salad, or skewer them for a casual cookout with dips like yogurt sauce or chutney.

Herbed Chicken Kofta Meatballs

    Gather all the ingredients.

    Place the onion, cilantro, mint, garlic, ginger, and jalapeño in a food processor; pulse until very finely chopped with about 10 quick 1-second pulses. Transfer the mixture to a kitchen towel and squeeze out as much liquid as you can.

    Put the squeezed onion mixture, ground chicken, breadcrumbs, oil, egg, garlic powder, salt, cumin, coriander, and black pepper in a large bowl; mix gently until everything is evenly combined.

    With gloved, moistened hands, form the chicken mixture into 12 cylinders about 3x1-1/2 inches each and set them on a baking sheet. (If grilling, shape the mixture onto skewers.)

    To Broil: Preheat the oven broiler and position a rack about 7 inches from the heat source. Line a large rimmed baking sheet with aluminum foil and coat it with cooking spray. Arrange the koftas in a single layer about 2 inches apart and spray them with cooking spray. Broil, turning the koftas halfway through, until browned and a thermometer inserted in the center reads 165 degrees F (74 degrees C), about 8 minutes.

    To Grill: Preheat the grill to medium, 350 to 400 degrees F (175 to 200 degrees C). Place the skewers on oiled grates; grill, covered, turning every 2 minutes, until charred and a thermometer inserted in the center reads 165 degrees F (74 degrees C), about 8 minutes. Alternative Method: Heat a large oiled grill pan over medium-high for about 2 minutes. Add the koftas to the pan; grill, uncovered, turning every 2 minutes, until charred and a thermometer inserted in the center reads 165 degrees F (74 degrees C), about 10 minutes.

    To Air-fry: Preheat an air fryer to 380 degrees F (193 degrees C) for 2 minutes. Spray the koftas with cooking spray. Working in batches if needed, place the koftas in the air fryer basket in a single layer and cook, flipping after 4 minutes, until browned and a thermometer inserted in the center reads 165 degrees F (74 degrees C), about 8 minutes.
