Chicken Pastina
Chicken Pastina is a cozy Italian soup where tiny pasta cooks in savory chicken broth, then is enriched with butter and Parmigiano Reggiano for a silky, comforting finish. Each spoonful is warm, peppery, and lightly creamy, perfect for a quick lunch or a soothing weeknight bowl.

Bring the broth to a simmer over medium-high heat. Taste it, and season with salt if needed.

Lower the heat to medium and stir in the pastina. Cook, stirring occasionally, for about 30 seconds less than the package directions, 5 to 8 minutes.
- 3
Turn off the heat and stir in the black pepper, butter, and some of the grated cheese. Stir continuously until the butter melts.

Ladle the pastina into hot bowls. Top with more freshly ground black pepper and the remaining Parmigiano Reggiano, drizzle with olive oil, and serve.
