    Heat 2 tablespoons oil and 1 tablespoon butter in a cast iron skillet over medium heat.

    Add the chicken tenders and cook, turning occasionally, until the chicken is no longer pink in the center and the juices run clear, about 10 minutes.

    An instant-read thermometer inserted near the center should register 165 degrees F (74 degrees C).

    Remove the chicken from the skillet.

    Add 1 tablespoon olive oil and 2 tablespoons butter to the cast iron skillet.

    Add the shallots; cook and stir for 1 to 2 minutes.

    Add the broth and bring it to a simmer.
