Chilled Corn Cauliflower Soup

    Heat oil in a large saucepan over medium heat. Add cauliflower, onion, and 1/4 teaspoon salt, reduce heat to medium-low, cover, and cook, stirring occasionally, until the onion is softened, about 8 minutes. Add corn and garlic; cover and cook for 4 minutes. Add chicken broth and the remaining 1/2 teaspoon salt, raise heat to medium-high, bring to a boil, then take off the heat.

    Fill a blender halfway with 1/2 of the soup mixture. Cover and hold the lid down with a potholder; pulse a few times, then blend until smooth. Pour into a bowl. Repeat with the remaining 1/2 of the soup mixture. Cover the bowl with plastic wrap; chill the puréed soup in the refrigerator for at least 4 hours.
