Chrusciki

Dessert 🍰Snack 🍿 Polish 🇵🇱

Chrusciki are delicate Polish bow-tie cookies with a light, shattering crunch and a snowy dusting of confectioners’ sugar. Hints of vanilla and a splash of whiskey keep the dough tender and aromatic, making them irresistible alongside coffee or for holiday platters. Serve a piled platter of these airy angel wings when you want a festive, crowd-pleasing treat.

Chrusciki
  1. 1

Whisk the egg yolks, egg, sugar, whiskey, salt, and vanilla together in a bowl.

  2. 2

    Stir in 2 cups flour.

  3. 3

If the dough is sticky, stir in the remaining 1/2 cup flour.

  4. 4

Knead the dough on a lightly floured surface for 5 minutes.

  5. 5

Divide the dough into thirds and cover with plastic wrap.

  6. 6

Heat 1 inch of oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

  7. 7

Working with one piece of dough at a time, roll it on a lightly floured surface until paper-thin.

  8. 8

Cut into parallelograms (long diamonds); use a sharp paring knife to make a slot in the center of each, then pull one point of the diamond through the slot.

  9. 9

Repeat to make the remaining cookies.

  10. 10

Fry two to four pieces at a time, depending on the size of your pan, until crisp but not browned, 5 to 10 seconds per side.

  11. 11

Drain on paper towels and dust with confectioners' sugar when cool.
