Classic Biscuits
Classic Biscuits bake up tall and flaky with buttery layers and a tender, tangy crumb from Greek yogurt. They’re rich yet light, perfect warm from the oven with a brush of butter and a pinch of flaky salt. Serve them for breakfast, brunch, or alongside hearty soups and roasts.

Preheat the oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper. In a large bowl, whisk together the flour, baking powder, baking soda, and fine sea salt.
- 2
Coat the whole stick of butter in the flour mixture. Grate the butter on the large holes of a box grater into the bowl. If the butter begins to melt, coat it in the flour mixture again and keep grating. Use your fingers to toss the butter in the flour mixture until all the pieces are separated and coated in flour; the mixture should look like coarse crumbs.
- 3
Whisk the yogurt and water together in a small bowl; add to the flour mixture. Gently fold to bring the dough together. The dough should be moistened but still crumbly. If it is too dry, add more cold water, 1 tablespoon at a time, until fully moistened.
- 4
Turn the dough out onto a lightly floured work surface. Lightly knead three or four times until it comes together. Sprinkle with flour and pat to 3/4-inch thickness. Cut the dough into four equal portions. Stack the portions, press down, and pat again to form a 3/4-inch-thick rectangle. Repeat this process three times, adding flour as needed.
- 5
Press a 2 1/2- to 3-inch biscuit cutter straight down into the dough to cut out biscuits. Gently knead the scraps together, pat to 3/4-inch thickness, and cut again. Arrange on the prepared baking sheet so the biscuits are just barely touching.
- 6
Bake in the preheated oven until the tops are crisp and golden brown, 15 to 16 minutes. Let cool on the baking sheet for 5 minutes. Brush the tops with melted butter and sprinkle with flaky salt. Store in an airtight container up to 3 days; chill up to 1 week. To reheat, bake about 10 minutes at 375 degrees F (190 degrees C).
