In a large mixing bowl, combine the potatoes, potato water, butter, sugar, salt, and hot water. Stir until the butter melts, then set aside to cool.

In a small bowl, combine the yeast with 1/2 cup warm water and let it rest for 5 minutes.

Add the eggs, 2 cups flour, and the yeast mixture to the potato mixture, then beat until well mixed.
