    Season the beef generously with salt and black pepper; set it rib-side down in a roasting pan.

    Roast in the preheated oven until medium-rare or your preferred doneness, about 2 hours 20 minutes. Move the beef to a cutting board; let it rest for 20 minutes.

    Pour off any fat from the pan drippings; stir the wine into the drippings. Bring to a boil over medium heat, scraping the browned bits from the bottom of the pan with a wooden spoon. Lower the heat to medium; cook 5 minutes more. Strain the wine mixture through a fine-mesh sieve into a saucepan.

    Whisk the stock and flour together in a bowl; gradually whisk into the wine mixture. Cook and stir over medium heat until the sauce boils and thickens, about 5 minutes; season with salt and black pepper. Serve the sauce with the beef.
