Coconut Lime Rice

    Rinse the rice until the water runs clear; drain.

    Heat the coconut oil and butter in a large skillet over medium-high heat. Add the rice and coconut flakes; cook, stirring, for 3 to 4 minutes. Stir in the lime juice, then add the coconut milk, chicken broth, lime zest, and salt. Bring to a gentle boil.

    Reduce the heat to low, cover, and cook for 20 minutes.
