Bacon and Corn Potato Salad balances sweet kernels of fresh corn with salty, crispy bacon and tender Yukon Gold potatoes. Bacon and Corn Potato Salad

    Bring a large pot of lightly salted water to a boil.

    Add the corn and cook until slightly soft but still crisp, about 5 minutes.

    Cut the corn kernels from the cobs and discard the cobs.

    Heat olive oil in a large skillet over medium heat.

    Cook and stir the bacon in the hot oil until browned and crispy, 5 to 10 minutes.

    Transfer the bacon to a paper towel-lined plate to drain, reserving the drippings in the skillet.

    Cook the potatoes, stirring occasionally, in the same skillet over medium heat until golden brown, about 5 minutes.

    Add the red bell pepper and salt; cook and stir until the peppers are tender, about 5 minutes more.

    Stir the corn kernels into the potato mixture and cook until the corn is heated through, about 5 minutes.

    Pour the corn-potato mixture into a large bowl.

    Add the bacon, red onion, cider vinegar, and red pepper flakes; toss to combine.
