    Assemble all the ingredients.

    In a large bowl, mix the warm water and yeast. Let it sit until foamy, about 5 minutes.

    Meanwhile, place the egg whites and cottage cheese in a blender or food processor. Cover and blend until smooth.

    Pour the cottage cheese mixture into the yeast mixture and whisk to combine.

    With a wooden spoon, stir the flour and salt into the wet mixture until combined (the dough will be sticky).

    Turn the dough out onto a lightly floured surface and knead for about 5 minutes, or until smooth but still slightly tacky, adding more flour as needed.

    Form the dough into a ball and place it in a lightly greased bowl. Cover and let rise in a warm spot until doubled in size, about 1 hour.

    Line a 9x5-inch loaf pan with parchment paper.

    Punch down the dough and turn it out onto a lightly floured surface. Gently pat and pinch it into a loaf shape, tucking the edges underneath.

    Set the shaped dough, seam side down, in the prepared loaf pan. Cover and let rise in a warm place until nearly doubled in size (about 30 minutes).

    Preheat the oven to 400 degrees F (200 degrees C). With a sharp knife, make a shallow lengthwise slit down the center of the loaf.

    Bake until the bread sounds hollow when lightly tapped, 40 to 45 minutes. Loosely cover with foil for the last 10 to 15 minutes to prevent overbrowning.
