Classic Vanilla Crème Brûlée Custard

    Preheat the oven to 300 degrees F (150 degrees C).

    In a mixing bowl, whisk the egg yolks, 4 tablespoons white sugar, and vanilla extract until thick and creamy; set aside.

    Pour the cream into a saucepan and stir over low heat until it nearly reaches a boil.

    Whisk the cream into the egg yolk mixture; beat until combined.

    Pour the mixture into the top pan of a double boiler. Stir over simmering water until it lightly coats the back of a spoon, about 3 minutes.

    Pour into a shallow heat-proof dish or into individual ramekins.

    Bake in the preheated oven until the custard is set but still slightly jiggly, about 30 minutes. Let it cool to room temperature, then refrigerate until chilled, at least 1 hour or overnight.

    Set the oven to broil.

    In a small bowl, combine the remaining 2 tablespoons white sugar with the brown sugar. Sprinkle the mixture evenly over the custard.

    Place the dish under the broiler until the sugar melts and caramelizes, about 2 minutes. Watch carefully to avoid burning.

    Let it cool slightly, then refrigerate until the custard sets again, about 10 minutes.
