Crunchy Buffalo-Style Shrimp

    Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).

    In a bowl, whisk together the flour, lemon pepper seasoning, baking powder, salt, garlic powder, and cayenne pepper. In a separate bowl, whisk the eggs and milk together.

    Pat the shrimp dry with paper towels. Dip the shrimp into the egg mixture, then dredge in the flour mixture to coat evenly. Place the shrimp on a baking sheet in a single layer until frying; sprinkle with remaining flour to fully cover if needed.

    Carefully lower the shrimp, 8 to 10 at a time, into the hot oil; fry until golden brown and cooked through, about 5 minutes. Transfer to a baking sheet lined with paper towels. Repeat with the remaining shrimp.

    Toss the shrimp with hot sauce in a large bowl until thoroughly coated.
