    Put the ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until the remaining meat falls off the bone, about 2 hours. Remove and discard the bone. Use a slotted spoon to move the meat to a bowl.

    Meanwhile, put the lima beans in a large pot; add enough cold water to cover. Bring to a boil; take the pot off the heat, cover, and let sit for 1 hour. Drain and rinse the beans.

    Heat oil in a skillet over medium heat. Add the celery and onion; cook, stirring, until the onion is translucent, 5 to 7 minutes. Add the cooked ham bone meat, lima beans, and diced ham. Reduce the heat and simmer, adding more water as needed, until the soup thickens to your liking, about 90 minutes.

    Stir the carrots, salt, pepper, and parsley into the soup. Let it simmer until the carrots are tender, about 30 minutes more.
