Dan’s Classic Homemade White Bread

    Place the milk in a microwave-safe bowl. Microwave on low until gently warmed to about 100 degrees F (38 degrees C), about 15 seconds. Stir in the sugar and honey until dissolved. Stir in the yeast; let stand until the yeast softens and forms a creamy foam, about 15 minutes.

    Combine 4 cups bread flour and the salt in the bowl of a stand mixer fitted with the paddle attachment; pour in the yeast mixture.

    Mix on low speed until thoroughly combined, about 1 minute; the dough will be very wet.

    Add the butter; mix in the remaining 2 cups bread flour, or as needed, until the dough begins to form a ball.

    Switch to the dough hook; knead until the dough is smooth and springy, about 4 minutes.

    Transfer the dough to a well-floured surface; knead until the surface of the dough begins to break during folding and kneading.

    Roll the dough into a ball; place it into a large, lightly floured bowl.

    Cover the bowl with a towel and let rise in a warm place until doubled in volume, about 1 hour.

    Coat two 9x5-inch loaf pans with cooking spray.

    Punch down the dough; transfer to a floured surface.

    Knead for 2 minutes; cut the dough in half with a sharp knife.

    Form the dough into logs, adding more flour if needed, and place them into the prepared pans.
