Place the milk in a microwave-safe bowl. Microwave on low until gently warmed to about 100 degrees F (38 degrees C), about 15 seconds. Stir in the sugar and honey until dissolved. Stir in the yeast; let stand until the yeast softens and forms a creamy foam, about 15 minutes.
- 2
Combine 4 cups bread flour and the salt in the bowl of a stand mixer fitted with the paddle attachment; pour in the yeast mixture.
- 3
Mix on low speed until thoroughly combined, about 1 minute; the dough will be very wet.
- 4
Add the butter; mix in the remaining 2 cups bread flour, or as needed, until the dough begins to form a ball.
- 5
Switch to the dough hook; knead until the dough is smooth and springy, about 4 minutes.
- 6
Transfer the dough to a well-floured surface; knead until the surface of the dough begins to break during folding and kneading.
- 7
Roll the dough into a ball; place it into a large, lightly floured bowl.
- 8
Cover the bowl with a towel and let rise in a warm place until doubled in volume, about 1 hour.
- 9
Coat two 9x5-inch loaf pans with cooking spray.
- 10
Punch down the dough; transfer to a floured surface.
- 11
Knead for 2 minutes; cut the dough in half with a sharp knife.
- 12
Form the dough into logs, adding more flour if needed, and place them into the prepared pans.
- 13
Cover the loaves with a towel and let rise in a warm place until doubled in volume, about 1 hour.
- 14
Preheat the oven to 400 degrees F (200 degrees C).
- 15
Place the loaves in the preheated oven; reduce the oven temperature to 350 degrees F (175 degrees C).
- 16
Bake until the tops are golden brown and the loaves sound hollow when thumped, about 25 minutes.
- 17
Cool the bread in the pans on wire racks for about 5 minutes before turning out to finish cooling on wire racks, about 40 minutes more.
- 18
Cover the loaves with a towel as they cool.
