Roasted Potatoes with Dijon

    Preheat the oven to 375 degrees F (190 degrees C). Grease a roasting pan.

    In a bowl, mix the olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper; add the potatoes and toss to coat. Move the potatoes to the prepared roasting pan.
